The Yucatan Peninsula is a region that developed since pre-hispanic times as an independent and isolated area from the major centers of influence. Much of this was due to geographical and natural barriers that surround it, resulting in a unique development that created particular tendencies, from the architectural to the social social, and also with the culinary.

Today we present you a guide to the Mayan kitchen, which still lives in the Yucatecan cuisine, and has international fame. This cuisine is distinguished by the use of seasonings and spices such as pumpkin seed, oregano, onion, sour orange, sweet chili, lime, axiote, xcat chile, the habanero chile and coriander. The combination of these ingredients have created mythical dishes like Cochinita Pibil, Poc Chuuk, Relleno Negro (pork and turkey meat on a black sauce), Escabeche (a turkey dish), Panuchos and Salbutes, and the traditional lime soup. To accompany these delicious dishes,  you can have a refreshing Horchata (made of rice) or Chaya (a green lead which is very fresh) water, and as a digestive, a good Xtabentun, a liquor made from fermented honey bee feeding on a flower of the region known as xtabentun and anise.

Some of the most important and typical dishes of Mayan culture are:

• Tóoksel: made of Ibes (a variety of white beans), seasoned with epazote, ground seeds of pumpkin, coriander and onion, usually cooked in clay pots and stones that are heated with coal, which gives them a very distinctive flavor of the region.

• Motuleños Eggs: This is the famous fried eggs served on a bed of tortilla fried in lard and bean paste, which are served on fried eggs bathed with tomato sauce and finished with chopped pieces of ham, peas and grated cheese. They are called Motuleños beacuse of the town that invented them: Motul.

• Sikilp’aak: A delicious dressing made from crushed seeds of pumpkin, roasted tomato and coriander, which is the perfect way to whet your appetite, accompanied by some chips.

• Polcanes: These treats are very similar to prehispanic “sopes” (its like a tortilla but with stews on the top), this is a cornmeal pancake filled with a paste made from Ibes (white beans), scallions and ground seeds of pumpkin. These pancakes are fried and served with cabbage seasoned with sour orange top, giving it the special touch of the region.
